Sweet Potato Home Fries


Here is a twist on a traditional breakfast food - home fries. Instead of using starchy white potatoes I use sweet. These are delicious! I usually make them on weekend morning or when we have guests.

Sweet Potato Home Fries:
  • 4 Large Sweet Potatoes
  • 2 Tablespoons Coconut Oil
  • 1 Tablespoon Dill
  • 1 Tablespoon Sea Salt
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Onion Powder
  • 1/2 Teaspoon White Pepper
  • 1/8 Teaspoon Crushed Red Pepper

Method:

Peel sweet potatoes and cut into cubes.

Mix together spices in a bowl. Set aside. Melt coconut oil in a glass baking dish and add potatoes.


Spoon spices onto the potatoes and mix well.


Put into the oven at 450 degrees. Set timer for 20 minutes. Stir potatoes after 20 minutes and reduce heat to 400. Potatoes will take about 45 minutes total. They are done when they start to brown (see below picture) and are fork tender.

  1. I have yet to make your garlic-lime sweet potatoes, because I normally buy my produce (organic) from a local health food shop and they haven't had any limes. I came across your home fries recipe and am fixing this for dinner tonight. It looks SO good! Thanks for all the terrific recipes!

  3. They were awesome! I did cut my potatoes a little small, as supper was running late, and my total cook time was 45 minutes (20 + 25). I was wondering, in your instructions is the total cook time 45 minutes or 20 + an additional 45? Thanks!

  4. 45 minutes total, I think. I never time mine when at home (except when I was writing out the recipe!). I will edit to be more clear!

  5. I just want you to know that this recipe has become a favorite in our house. We all just love it - it is so delicious! I even brought some to my dad to try and he hates sweet potatoes (so he says). He sent me a text this morning saying how very good they were this way. :)

  6. Linda- I am so glad. These are favorites over here as well. I always make them when we have guests and almost always people say "I do not really like sweet potatoes, but these were good!"
