Brussels Sprouts with Bacon and Caramelized Onions



"But I don't like Brussels Sprouts"

This seems to be a theme with people. I like to say that if you think that you do not like them, you must not have had them prepared the right way! These are fantastic. I love them so much I could eat the entire batch by myself.

Brussels Sprouts with Bacon and Caramelized Onions:

  • 1 Bunch Fresh Brussels Sprouts
  • 2 Pieces Thick Cut Uncured Bacon
  • 1 Small Onion
  • Salt and Pepper to Taste

Method:



Take brussels sprouts. Cut off the bottom and then slice in half.



Repeat with all of brussels sprouts. Place into a bowl with fruit/vegetable cleaner. Let them soak. This should remove some of the dirt which may be hiding inside of these small sprouts.


Dice bacon and set aside. Dice onion and set aside. In a cast iron pot (What? You do not have one? What are you waiting for? They are amazing! Special thanks to my Mom for mine!) cook bacon until crisp. Make sure the bacon is crisp, this is important.



Add onions.


Make sure to cook the onions until they start getting a beautiful golden color.


When they start looking like the above picture, add the brussels sprouts. Make sure you rise and drain the sprouts well.


Continue cooking brussels sprouts at a medium heat until they look like this (below)


So, go ahead and give them a try (even if you think you don't like them) you may surprise yourself!
