A twist on the ordinary, brown rice made with slightly sweet coconut milk and then kicked up a notch with tomatoes and mild green chilies. Again, quick and easy and best of all delicious!

Coconut Scented Brown Rice with Tomatoes and Green Chilies
- 1 1/2 Cups of Short Grain Brown Rice
- 2 Cups of Water
- 1 Cup of Diced Tomatoes with Green Chilies (I used canned)
- 1/2 Cup of Coconut Milk
- 1 Tablespoon of Butter
Into a pot on a medium high heat add the butter. Once that is melted add brown rice. I am using short grained brown rice.
Sautee the rice in the butter until slightly brown.
Add the tomatoes and green chilies.
Next comes the coconut milk.
And finally the water. Bring to a simmer and then reduce to lowest heat. Cook rice according to timing instructions on the package. Mine said 45 minutes.
It's done! Serve and enjoy.
